Tuesday, 9/26/17

Used up some fried eggplant in the freezer to make grinders. Topped with provolone instead of mozzarella, they were really tasty. I also steamed some broccoli and topped it with lemon, red pepper flakes and some asiago. Carter says he might like eggplant grinders better than regular old eggplant parm.
