Carter was very dubious of tonight's tofu and eggplant dinner, from "Weeknight Vegetarian". But then he ate the whole bowl in one go, so I guess it was OK? The tofu and eggplant are cubed and roasted separately, then served over rice with a sweet-chili sauce (which turned out to be basically wing sauce. Not a bad thing). Nice new way to serve tofu, which I appreciated.
