Khichdi (rice and lentils) in the Instant Pot, from the NYT. I took commenters advice and toasted and ground the spices (good) and reduced the water (bad. I wanted something a bit soupier). Threw in some spinach and served cabbage with mustard seeds on the side. Plus I made some raita (surprisingly good and so why do I never get it at Indian buffets? Must start). Good enough.
