Sunday, 3/30/25

A soup from the NYT that I have made at least once before, that features little turkey meatballs with feta and oats. Odd but good. You finish it off with a bunch of spinach and simmer the broth with more oats, but that didn't appeal so we had egg noodles instead (I also baked the meatballs in a 375 oven instead of trying to fry them in the soup pot. No regrets there).   As I was making this over the weekend, it was only meh, but adding some lemon and letting it sit for a day or so really brought it up a bunch.

I also made a batch of cookies from the SK Keepers cookbook, just because the picture was so pretty....plus it uses  neither eggs not butter. Rosemary-olive oil shortbread with dark chocolate may have sounded crazy to Jason, but they are surprisingly good. Mine were light on rosemary, since out little plan is looking pretty bedraggled. and Jason admitted that he liked them.
