I knew I was going to cook chicken for dinner, but it took me a long time to decide what I was going to do with it. Don't know how I settled on chicken parmesan but it was really good. I didn't think my family could make the switch from eggplant to chicken, but they were brave. Served with cauliflower that I gave the broccoli treatment (roasted with garlic, topped with lemon and parm), and some of the many leftover dinner rolls that Jason made.
