I took advantage of having roasted a chicken to make stock and used the leftovers to make a chicken-coconut soup. Basically, ginger, garlic, lemongrass (annoying to chop and didn't add much), coconut milk, and fish sauce. I had to tinker a bit to get the flavors right, but I thought it was delicious. I served it over noodles, and have sauteed kale alongside. I personally just threw the kale into mine and that was also good. The recipe wasn't from anyplace in particular---I just looked at a bunch of recipes to get the general idea.
