Eggplant grinders (using some eggplant from the freezer). We experimented with using fresh tomatoes instead of tomato sauce and I am not sure if it was an unqualified success. Maybe it would have been if we had had big juicy summer tomatoes (but we used tasty but small cherry tomatoes instead). At east it was a quick dinner to assemble.
