 A version of a pasta dish that Jason used to make for me long ago: onions, ricotta and walnuts. I made a few tweaks: added spinach an a couple of spoonful's of chili crisp. I also toasted the walnuts separately and tossed them on top. The onions were not cooked long enough so they retained some crunch which I really do not care for, but the flavors were good. It was my fault for telling Jason that they didn't need to be caramelized.
