Orzo with feta and spinach, from the NYT. Pros: since this was all made in one pan, it was very easy. Cons: it tasted good but not amazing. I added mushrooms and cherry tomatoes and I don't think they really added anything. This was supposed to be reminiscent of spanakopita, which it turns out is what I really wanted, but nobody wants to play around with phyllo on a work night.
