The NYT has been giving me some good vegetarian suggestions lately, and tonight's lentils diavolo were perhaps my favorite lentil preparation ever. Garlic, smoked paprika, tomato paste, jalapenos and crushed red pepper form the base, then just simmer water and red lentils. So flavorful! I served them with orzo and feta (as was suggested by people in the comments) and I thought they were great.
