Monday, 4/28/25

 Tostadas with chicken tinga, avocado, queso fresco and jalapenos. I think the recipe for the tinga was kind of from Serious Eats and maybe a little from other sources? In any event, I used a whole chicken and some of the leftover dried chilis from the pozole. Tostadas was a tasty but very messy choice. Easier than making our own tortillas, though. Roasted carrots on the side.
