A recipe from "Weekday Vegetarians get Simple" that looked good as I was flipping through it at work. Can't resist "brown butter orzo with zucchini". This was similar to a SK pasta dish in that it called for cooking shredded zucchini for a while; the brown butter certainly added a lot of delicious flavor. I think I could have even doubled the zucchini, though. It also would have been nice with a little crunch, like toasted panko or nuts. Than Jason and I ate a whole thing of Ben and Jerry's.
