I made eggplant parmesan at Carter's request, but I am afraid it wasn't my best effort. i blame two things: breading the eggplant in the morning, and the actual eggplants themselves which didn't seem as fresh as I would have like. They were basically fine, I guess. Jason made a really nice loaf of bread and I sauteed up some green beans with garlic and almonds, but nobody ate them. Well, Carter ate about 7 because I made him.
