First night of SULA, so dinner on the fly. Deli sandwiches and chips. For me the best part was the sweet red onion relish I made to go on them. Must remember that recipe:

INGREDIENTS
  • 2 tablespoons vegetable oil
  • 4 small red onions, thinly sliced
  • 1/2 cup sugar
  • 1 cup plain rice vinegar or champagne vinegar ( I used a mixture of plain red and white)
  • 2 teaspoons kosher salt
