Roasted tofu, rice and spinach. I marinated the tofu with soy sauce, maple syrup and chili crisp and I thought it turned out particularly well. I also tried out a peanut sauce from the NYT that claimed to be so good you would want to put it on everything. It was fine, but certainly nothing special. Maybe I will add a little tahini to the leftover to punch it up a bit. The spinach was a Korean side dish from Maangchi and I really like it....just blanched and then tossed with sesame oil, scallions, garlic and a little soy sauce.
