Welcome to Will it Waffle? Week! First stop? Latkes. Luckily, SMitten Kitchen had already tried it, so I just used her recipe (cut in half to avoid leftovers). The good: very easy, and much less messy. Tasted great. The bad? Not nearly as crispy as traditional potato pancakes. We had a lot of leftover spinach salad from the weekend, so we had that and some breakfast sausage links to go with it.
