A pinto bean and poblano dish from the NYT that pushed all my buttons: Ali Slagle! Poblanos! Salsa verde and lots of cheese! Super easy with beans that I cooked in the Instant pot the night before. Jason made us some corn tortillas to go with it (we debuted our new oven top griddle and it worked perfectly) and I trotted out the spinach salad (but didn't actually eat any. I was there for the beans and cheese).
