 By this point in the week we had quite a lot of leftovers, but Jason suggested (insisted?) that we go ahead and have the planned tofu anyway. Nothing fancy: roasted broccoli and tofu on a sheet pan, served with noodles. The key to the whole thing was a nice, spicy peanut sauce. This was quick and felt nice and healthy, so no regrets. But there will have to be a leftover reckoning at some point.
