Chicken enchiladas, from the NYT. Well, I finally found another meal that Carter just doesn't like. He finished his, but asked me to never make them for him again. I thought they were OK, and fairly easy to put together with chicken that I had cooked the day before. I also subbed in a can of green enchilada sauce instead of making my own. Homemade would probably been better but there was no denying that this was faster. Also had zucchini and summer squash.
